Ingredients

Protein power pumpkin soup

  • 1 --- brown onion, cut into quarters (approx 150g)
  • 3 clove garlic
  • 20 g olive oil
  • 1 heaped teaspoons smoked paprika
  • 1 level tsp dried ginger
  • 500 g pumpkin flesh, cut into pieces
  • 250 g water
  • 1 heaped tablespoons Vegetable stock paste
  • 1/4 level tsp salt
  • 1/4 level tsp ground black pepper
  • 300 g silken tofu, cut into 2cm cubes
  • 4 heaped tablespoons nutritional yeast, To serve (optional)

Recipe's preparation

  1. Place onion and garlic into mixing bowl and chop 5 seconds/speed 5. Scrape down sides of mixing bowl with spatula
  2. Add oil and paprika and cook for 5 minutes/100c/speed 1 without measuring cup
  3. Add pumpkin and chop 10 sec/speed 7
  4. add water, stock paste, ginger, salt and pepper. Place simmering basket in place of measuring cup and cook for 20 min/100c/speed1
  5. Add silken tofu and start blend/30 sec-9. Or manually increase speed gradually from speed 5 to speed 9.
  6. Transfer soup into serving bowls and top with nutritional yeast

Grated parmesan can be used in place of nutritional yeast for those who prefer dairy
