Chocolate coconut cake

  • 150 g Butter
  • 220 g caster sugar
  • 200 g Milk
  • 2 eggs
  • 40 g cocoa powder
  • dash vanilla extract
  • 240 g SR flour
  • 45 g Desiccated Coconut, plus extra for sprinkling (optional)
  • chocolate flakes, for sprinkling (optional)

Icing

  • 160 g Icing sugar mixture
  • 20 g cocoa powder
  • 40 g Butter, softened
  • 2 tablespoons Milk

Recipe's preparation

    How to:
  1. Preheat the oven to 180°C.
    Grease and line a slice tin.

    1. Melt the butter, 60°C/2 mins/sp1.

    2. Add all the other ingredients, except the coconut and flour, sp4/30secs. Scrape.

    3. Add the flour and the coconut, sp 4/30secs/Counter-clockwise operation.

    4. Bake for 30-35 mins or until cooked when tested.

    5. Leave in the tray for 10 mins then transfer to a tray to cool.

    6. Ice when cool enough.
  2. Chocolate icing:
  3. 1. Combine all the ingredients sp4/20 secs.

    2. Spread evenly over the cake and sprinkle with (optional) coconut or chocolate flakes.
