Ingredients
Oliebollen (Dutch New Years treat)
- 300 grams plain flour
- 2 level teaspoons dried instant yeast
- 250 grams Milk
- 1/4 level tsp salt
- 1 egg
- 1 heaped teaspoons lemon zest, grated, (1/4 lemon peel)
- 80 grams raisins
- 80 grams currants
- 25 grams candied peel, Chopped
- 1 cooking apple, Finely chopped
- 2 litres peanut oil, For deep frying
- icing sugar, Sifted

- Place the milk and yeast in the bowl and mix at 37
"Warm Up" for 1min on speed 1.
Add flour, salt, lightly beaten egg and lemon zest and mix for 6secs on speed 6. Wipe down bowl.
Add raisins, currants, mixed peel and apple.
"Dough mode" 2 mins.
turn out dough into warmed bowl and allow to rise for 1 hour.
Heat oil in saucepan to 150 deg C. Using two soup spoons, dip these in the oil and scoop a spoonful of dough into the oil. Do 5 oliebollen at a time. 4 mins one side then turn them over for another 4 mins. Scoop out and drain on paper towel. Repeat. Makes about 17-18 Oliebollen.
Best eaten when still a little warm by breaking and dipping in icing sugar.
Tip
Use a thermometer in the oil to ensure 150 deg is maintained throughout. Variations of 10 deg will over or under cook them. They should be a deep golden colour when ready.
