Chocolate Peppermint Slice (old fashioned)

Ingredients

Base

  • 125 g Butter
  • 150 g plain flour
  • 20 g cocoa powder
  • 80 g brown sugar
  • 40 g dessicated coconut

Filling

  • 40 g Milk
  • 20 g Butter
  • 300 g icing sugar
  • 2-3 tsp Peppermint Extract, to taste (I use 3 tsp)

Chocolate

  • 200 g chocolate, milk or dark (I use dark)

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Base
  1. Preheat oven 180°C and line slice tray with baking paper
  2. Melt butter 2 min/60°C/speed 2 or until butter is melted.
  3. Add flour, cocoa, brown sugar and coconut to melted butter. Mix 10 sec/ Counter-clockwise operation speed 4. scrape sides and repeat.
  4. Press mixture evenly into slice tray and bake for 15-20 min or until golden. Wash and dry bowl.
  5. Filling
  6. Heat milk and butter in Closed lid, 1 min/80°C/speed 2 or until butter is melted.
  7. Add icing sugar and peppermint essence. Mix 10 sec/ speed 3 scrape down edges and repeat if needed until combined.
  8. spread filling evenly over base and smooth the surface.
  9. Chill in fridge until firm. Wash and dry the bowl
  10. Chocolate
  11. grate chocolate 7sec/speed 8

  12. Add butter to chocolate and melt 2min30sec/50°C/speed 2 or or until completly melted
  13. Spread over filling and chill in fridge until set.
  14. Cut and enjoy
