Fluffy Vanilla Cupcakes (Gluten Free)

  • 125 g Butter, Room temp
  • 125 g caster sugar
  • 125 g Gluten free self raising flour
  • 1/4 tsp bicarb soda
  • 1 pinch xantham gum
  • 2 --- eggs
  • 1.5 tbsp Milk
  • 1 tsp vanilla extract

Recipe's preparation

  1. Preheat oven to 170°C

    Line a muffin tin with 12 cupcake liners

    Add butter and caster sugar and mix 15 seconds/speed 4/MC on

    Add flour, bicarb soda, xantham gum and eggs and mix 10 seconds/speed 5/MC on

    Scrape sides of mixing bowl. Add milk and vanilla and mix 10 seconds/speed 5/MC on

    Divide the batter between the 12 cupcake liners

    Bake for 22 minutes or until a skewer comes out of the middle of the cupcake clean

    Transfer to wire rack to cool completely

Tip

If you aren't gluten free you can omit the xantham gum and use regular self raising flour instead of gluten free flour and it will work perfectly.

    This is the best gluten free cupcake recipe. I did use my butterfly whisk to give it an extra lightness. So delicious!
