Healthy Banana Bread

  • 2 ripe bananas, large
  • 2 level tbsp Flaxseed Meal
  • 100 g Boiling water
  • 6 medjool dates
  • 200 g coconut milk
  • 100 g coconut oil

  • 200 g wholemeal spelt flour
  • 50 g Coconut sugar, optional. I don't put any in
  • 1 tsp Vanilla Paste
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven 180°
    Combine the flaxseed and boiling water, mix and leave to cool for a few minutes.
    Meanwhile weigh bananas, dates, coconut milk, chia seeds, coconut oil and cooled flaxseed mix into Thermomix bowl.
    Use blend mode for 40 sec or 40 sec speed 8
  2. Scrape down bowl and add the rest of the ingredients.
    Mix speed 4/10sec, scrape down bowl mix speed 4/5 secs
    Divide into 12 muffin cases or 9 mini loaf moulds
    Bake for 15-20 mins
    Can also be baked as one loaf for approx 40 mins

You can easily substitute coconut oil and use different milk to suit your dietary requirements. Leave out the coconut sugar to make these sugar free. I haven't tried making these GF yet but plain flour works fine if you don't have spelt flour
