Strawberry Coconut Muffins (Refined Sugar Free)

Ingredients

16 piece(s)

Muffins

  • 70 grams coconut oil
  • 160 grams Rapadura Sugar, Raw sugar is fine also
  • 1 teaspoon vanilla extract, Or 1x Vanilla Bean (seeds)
  • 250 grams self-raising flour
  • 100 grams wholemeal plain flour
  • 40 grams Coconut, Shredded or Desiccated
  • 1 egg
  • 300 grams buttermilk, Or substitution
  • 150 grams Fresh strawberries, Combo of sliced and whole

Recipe's preparation

    Muffins Method
  1. 1. Preheat oven to 180 deg

    2. Add coconut oil and sugar to bowl. Mix - 15 sec/speed 6. Scrape down sides

    3. Add remaining ingredients (EXCEPT STAWBERRIES) and mix 15 sec/speed 5

    4. Add strawberries and gently fold through with spatula

    5. Fill patty cases/muffin tin with mixture and bake for 15-20min until golden brown and cooked through

Tip

* Replace with any kind of berries

* Add some white chocolate chips in step 4 for extra sweetness

* Use 350g self-raising flour if you don't have wholemeal flour

    Delicious, moist muffins. Great recipe, turned out perfectly. Made 12 big muffins. I used raw sugar, soy milk instead of buttermilk, and threw in some white choc chips with the strawberries. Great flavour, not too coconutty, just perfect. Thank you!

    These are fantastic and rise like cafe style muffins. I added 40g of white chocolate chips and a teaspoon of homemade strawberry jam in each centre. Great recipe, thank you.
    Note to self: omitt coconut. Half strawberries in with sugar 120g - 30 mins.

    Really moist and yummy! I did a few substitutions and they still came out great! I used lite milk, only 100g sugar, lite nuttelex for half of the coconut oil and I pureed the strawberries instead of slicing them. Yum!

    My 7yr old has declared these as 'the best cake ever'I reduced the rapadura to 100g as we dont do much sugar & the strawberries were REALLY sweet. I also just used all white flour as I was out of the wholemeal.

    I did not have 250g SRF, just 180, but added wholemeal and some baking powder (acc. To the proportions for home made SRF). They came out perfect!
