Zingy Fruit & Nut Granola (Muesli)

Ingredients

500 g

Granola

  • 1 lemon skin, peeled with potato peeler
  • 200 g Mixed nuts of choice, walnuts, cashews, almonds, macadamia, brazil etc
  • 100 g dried fruit of choice
  • 60 g Pepita Seeds
  • 60 g Shredded coconut
  • 50 g rice malt syrup or raw honey
  • 30 g Pure Maple Syrup
  • 1 tbsp coconut oil
  • 1 tbsp Pure Vanilla Extract
  • 2 tbsp chia seeds, optional

Recipe's preparation

  1. 1. Preheat oven to 160 deg.

     

    2. Place lemon skin in TMClosed lid and mill - 10 seconds/speed 10. Repeat until fine.

     

    3. Add mixed nuts and give it a quick chop - 2-3 seconds/speed 4-5 or turbo pulse 1-2 times. Set aside and DON'T clean bowl.

     

    4. Add dried fruit and chop - 5 seconds/speed 6. Leave in Closed lid

     

    5. To the fruit add - lemon/chopped nuts mixture, pepita seeds, coconut, rice malt syrup or honey, maple syrup, coconut oil & vanilla extract and combine -  Counter-clockwise operation 10 seconds/speed 3.

     

    6. Spread granola mixture on an oven tray lined with baking paper, and bake for 25 minutes, tossing mixture every 7-8 minutes or so.

     

    7. Remove from oven and add chia seeds if desired.

     

    8. Serve with fresh tart Greek-style yoghurt and fresh fruit.

Tip

Granola will get crunchier as it cools. Store in an airtight container for 2-3 weeks (if it lasts that long!!!)

Feel free to sub ingredients or leave out the lemon zest. There are no hard and fast rules really so adapt it to suit your pantry contents at the time tmrc_emoticons.)

    I love this muesli! Flavour is perfect, turns out nice and crunchy, and I love that's it's just fruit and nuts, no grains! Delicious just with greek yoghurt.

    absolutely delish!!!

    i used 150gm walnuts, and added flaked almonds after chopping the walnuts. used 150gms of dried apricotsn and didnt have any maple syrup so used rice malt again as a sub.

    Absolutely love this granola. I've been making it weekly with variations depending on what is in the cupboard. Fantastic gluten free breakfast with fruit and yoghurt. Yum!!!!
