I’ve been trying for 15mins now. Still really gritty on speed 8. Any suggestions what I’ve done wrong?

Did you use raw coconut? From a fresh coconut. This didn't work at all for me. I tried it and another similiar recipe and all I have are mushy tiny shredded cocunut bits.

I just made a batch and is it normal for the "mouth feel" to be like it's trying to suck the liquid out if your mouth, or did I do something wrong?

As coconut absorbs a lot of water (i.e coconut flour) this is why you would have that result - all normal

I do 5 mins/60 deg/sp 6, then scrape the bowl and do 1-2 mins (depending on quantity) at sp 8 with no heat

You could add a little coconut oil which will help soften it slightly

Just added dark chocolate at the end and poured it on a slice for icing tmrc_emoticons.) sets hard in the fridge then cut with a sharp knife. Ends up really smooth on top, it's a bit hard to cut perfect as it can crack sometimes but it's pretty good!!

  • Just made a slice then poured

    Submitted by Aussiewiz on 30. January 2014 - 21:56.

Just made a slice then poured this on top as the icing.

Let it set then cut the slice as per usual.

it cracked when I cut it so it was not perfect looking but it was pretty good.

as far as flavour goes it was great (if your slice is coconut compatable) - shall be doing this again tmrc_emoticons.)

    Submitted by Aussiewiz on 14. November 2013 - 22:52.

Just coconut - I guess it is suggested that it is like a 'butter' spread but it does actually go quite hard so unless you melt it slightly it is not actually spreadable  tmrc_emoticons.)

    Submitted by Aussiewiz on 2. November 2013 - 20:57.

Fantastic! I am thinking this would make a great icing on cupcakes. For icing I'm going to experiment to make it slightly softer... Thinking cream cheese may be the answer?

This recipe is a great discovery! Thanks!!
