      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Coconut Yoghurt
  1. Place 800g coconut milk, 400g coconut cream, and 20g coconut sugar into mixiing bowl.
  2. Cook for 5 min/50°C/ speed 1 or until temperature reaches 50°C
  3. Add 10g vanilla paste and 150g coconut yoghurt (full fat with live cultures) reheat for 2min/50°C/speed 3
  4. Transfer yoghurt an air tight container that will fit into your varoma or your white Thermoserver if you have one
  5. Add 1 litre water and 50g vinegar / lemon juice to the bowl
  6. ThickeningRemove measuring cup from lid and place Varoma on top of lid.
  7. Place container holding yoghurt into varoma and place the lid on
  8. Using the fermentation mode on the TM6. Set it to 70 degrees for 10 - 12 hours
  9. Transfer to fridge to chill for a few hours till ready to serve
    This yoghurt will seperate as it cools, simply give it a good stir to bring it back together

Tip

I use Ayam Coconut cream and Ayam Cocinut milk, I also use Cocobella Coconut Yoghurt as my starter once you make the yoghurt, take out 150g for your next yoghurt
