Creamy Vanilla Yoghurt

  • 1 litre full cream milk
  • 110 grams milk powder
  • 100 grams pure cream, not thickened cream
  • 30 grams raw sugar
  • 1 level tsp vanilla extract
  • 200 grams Greek-style natural yoghurt (Jalna Pot set Greek yoghurt)

Recipe's preparation

    Creamy Vanilla Yoghurt
  1. Place milk, powdered milk, cream, sugar and vanilla into TM bowl and mix for 10 seconds speed 4. Heat for 12 minutes, 80 degrees, speed 2.

    Mix for 10 seconds, speed 4. Remove mixing bowl from TM, remove lid and cover with a tea towel and leave for approximately 1- 2 hours or place in fridge for approximately 30 - 50 minutes. Test temperature by placing bowl in TM and waiting until the 37 degree light turns off.

    When the light turns off add the pot of set yoghurt and mix for 4 seconds speed 4.

    Heat for 5 minutes, 37 degrees, speed 2.

    Boil kettle and pour boiling water into your EasiYo up to the first line, then put the baffle in, making sure that the boiling water stays just beneath the baffle. Pour yoghurt mix into EasiYo yoghurt containers (3/4 fill each one), leave for 12 hours and transfer EasiYo yoghurt containers to the fridge.

    Chill and serve.

    Save 200 grams of yoghurt to use as your starter for your next batch.

Tip

You will need 2 EasiYo makers and 2 EasiYo yoghurt containers for this recipe. This recipe makes approximately 1.75 litres of yoghurt, I fill each EasiYo container about 3/4 full.

If you use thickened cream it can leave a buttery crust on the top of your set yoghurt, this can be skimmed off but it’s easier to use pure cream (no gelatine added).
