Parmesan & Herb Bread Crumbs

  • 30 grams Parmesan cheese, cut into 1cm cubes
  • few sprigs fresh herbs (or a mixture), (ie parsley, basil, chives, rosemary)
  • 3 pieces bread (around 80g), torn into 8ths

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1.  

    1.  Place parmesan & fresh herbs into Closed lid and chop 10 seconds / speed 9.

     

    2.  Add bread and chop 5 seconds / speed 9.

     

    3.  Transfer into a container and use following the steps in the tips below.

Tip

Vary the herbs to suit what you have on hand, or what you are crumbing, ie rosemary is nice in a lamb chop crumb. 

Add other ingredients to suit tastes, such as chilli if you like it hot.

To use the crumb:- coat meat of choice in plain flour, then coat that with egg/milk mixture, then coat that with your crumb mixture.  Place crumbed meat in fridge until ready to use.  Cook as desired.

Unused crumb mixture can be stored in a zip-lock bag in the freezer.
