  • 3 carrots, roughly chopped
  • 2 tomato, halved
  • 1 zucchini, roughly chopped
  • 1 fresh or dried bay leaf
  • 1-2 sprigs fresh basil
  • 1-2 sprigs fresh sage, leaves only
  • 1-2 sprigs fresh rosemary, leaves only
  • 8 sprigs Fresh Flat Leaf Parsley
  • 150 grams rock salt
  • 1 tablespoon garlic infused olive oil

Recipe's preparation

  1. Place vegetables and herbs in bowl.  Chop 10 seconds/speed 6

  2.  

     

    Add salt and oil.  

  3.  

     

    Cook 20 minutes/Varoma/speed 1. Place basket on lid instead of MC.

  4.  

     

    Blend 1 minutes/speed 9.  Bring up to speed 9 gradually.

Tip

The first time I made this I had celery in it, but realised that is not low FODMAP (still on the FODMAP learning curve here), but I've since substituted with brocolli.  Please remember that this is a recipe that is easy to change - whatever you have available just chuck it in! tmrc_emoticons.)

    I hope you found your answer - it seems it is the flesh of the garlic which is the problem, so infused oil is safe.

    And you can substitute the green part of a spring onion for onion also.

    We are starting fodmaps, is garlic oil okay? The bit in bold,on our list we were given is NO ONION OR GARLIC. This has made me very sad, I use them both in EVERYTHING.

    Thank you! I made this today for a friend, good to know its safe for her family and will hopefully make cooking a little simpler with stock on hand.

    - full salt amount means it won't freeze solid and can be scooped out of one container. I often use half the salt and then freeze in ice trays as it will freeze more solid without the salt and can't be scooped out as easily.

    AnnaSpanner, it won't freeze if you use the full 150g of salt.

    The less salt you have, the better it will freeze!

    I tried to freeze this, but it refuses to freeze eeeeeeeek how rude!! I may have put more veggies in than recipe suggests, is this why? Do you know how long it lasts in the fridge?

    Thanks I made this tonight. My husband has been advised to try the fodmap diet and it's all new to me too. We thought celery was ok too though and added it? Seems to be conflicting information out there! Put the stock in a chicken risotto though and it was delicious. Thanks for posting. I may try modifying the chicken stock concentrate too!

    I origianlly had celery in this, but realised that is not low FODMAP.  You can substitute with brocolli.  I will add this to the recipe notes I think.

    Thanks for the tip about the steamer basket and holding the MC with the spatula! I haven't used this in a meal yet but to taste it, my first thought was "bleagh, salty!" But then I realised that I could taste the veges and herbs through the salt. I will be making soup on Sunday so am looking forward to trying it. I have put it in an ice cube tray and will store it in a sealed container in the fridge.
