Forum Runny Sorbet.

I would assume it is probably the heat as well. I made a watermelon sorbet on Christmas Day and a chocolate one on Boxing Day...whilst both were fine, they had a bit of liquid in the jug and no amount of mixing was going to firm it up. Watermelon also has a high water content and I was planning on freezing it for the next batch. No left over of the watermelon but the little left over of the chocolate I froze into ice block moulds and made 'paddle pops'
The fruit was room temp and both times it has been a really hot day!..
That could probably play a part in it..
I'll try again with colder fruit at some stage... see how i go..

hmmm, odd. Ive made it twice now and both times are okay. The first time, my ice wasn't totally frozen (kids were too eager) and it was sloshy, so I put it in the freezer in a container and it was fine. When you need to eat it, put it out of the freezer 15mins beforehand so it can soften enough to scoop.
Was the fruit cold or room temp? Was it a very hot day (hot inside)? Maybe put the Thermomix in the fridge for a while to cool down first (just make sure the prongs on the bottom are bone dry before using again).

Just wondering if anyone can give some advice as to why my sorbet is runny!! Ive tried twice now and they have both turned out the same way...... im just making a cold drink. :(
