Yoghurt is such a temperamental recipe.
The enzymes in the yoghurt continue to work so yoghurt gets runnier over time. The best solution is to strain yoghurt through a nut milk bag.
Place the nut milk bag into a simmering basket and leave yoghurt to drain overnight. This, however, does reduce yield.

Hi i made the yoghurt from automatic recipes in TM5 and it's too runny. Any ideas on how to rectify this?

This is a thinner consistency yoghurt which is of pouring consistency - more like drinking yoghurt.

If a thicker set yoghurt is preferred we recommend using the Variation for Thicker set yoghurt which is part of the Plain Yoghurt recipe in the cookbook and on the Recipe Chip.


I agree, this is such a bad recipe.  Come on Thermomix give us recipes we want not what some creator thinks is best.  Maybe listen ??????

So i'm making the thick set yoghurt, the first time i made the regular youghurt is was fine, second i made the thick set and it failed miserably. I'm trying my luck at the thick set again, but i'm thinking maybe the youghurt i'm using doesnt have the right fat content or something. My actual question though, is can you put the yoghurt in the fridge to cool it down to the 37 degrees faster? It's taken way longer than an hour to cool. mainly cos its summer i suppose. But will this work or will it mess with the chemistry of the yoghurt?

When I first made it with the automated cooking it seemed thicker but as time has gone on it is getting thinner and thinner. I will give the thick recipe ago but it seems much more work. Disappointed the automated does not do a better job. Anyone tried perhaps a different thickening agent????
