Forum Bolognaise sauce
Try increasing the speed a little. It can help this problem.
I don't have a problem with using a "stainless steel" scourer, sometimes called "curly girl". The bowl is stainless, shouldn't hurt it. The only thing I have burnt on is butter, and not seriously. I should point out this is NOT steel wool or steel wool soap pads
I also have issues every time I cook bolognaise in my TM5. Burns on the bottom and is so, so difficult to get off. I have to soak it 2-3 times because I'm too paranoid to use anything harsher than a soft scrubber on the bottom of the bowl and that does nothing to lift the burnt stuff Definitely makes me avoid using my thermomix.
Hi Katrina and Rose, can you please advise which Thermomix model you are using so that we can help you to troubleshoot. The bolognaise is a large volume recipe and we find that stopping after 5-10 minutes to give it a good stir with the spatula can make all the difference and ensure that the mixture moves around evenly. This will stop it burning. Also, if you're grating you're parmesan cheese before cooking the sauce, make sure you clean the bowl before starting the sauce.
I have also had issues with burnt residue on the bottom of my TM5. I made the Chicken Stock Paste from the chip and it was burnt on the bottom and REALLY difficult to clean. That was the worst, but I often have residue stuck to the bottom after cooking. I often feel like my Thermie isn't mixing properly either and have to turn it up higher than the recipe states, or chop for longer than stated. I am beginning to think that it is not working quite as it should be.
I cooked the bolognasie sauce from the recipie book again last night and the mince again got burnt onto the bottom on the bowl. Does anyone else have this problem. It makes cooking a simple spaghetti bolognasie a real pain to clean up after.
