Hi , Hie Family- I buy jars in bulk, which is very convenient as you always have them and you don't have to scrape off the labels which is a pain. Failing this, the best jars to recycle are the twist and lock ones (not screw top). Sterilise in your dishwasher which should have a sterilise cycle, or put in a pre-heated 140 C oven for about 6 mins.. Use hot out of the oven. When you fill your jars, put a metal spoon in the jar and pour over the hot preserve.This will stop the jars from cracking. Using a teatowel in each hand, firmly hold the jar and fit the lid. Immediately turn upside down (do make sure that you have a good seal before you do this!) Leave to go cold overnight: you will have a perfect airtight seal by the morning
. Store in a dark and cool cupboard- I wouldn't use a pantry.
Note that recipes will tell you how long the shelf life is and whether preserves need refrigeration. (I have spag sauce in my cupboard that I made last summer,,,)
