I think if you have the festive book you could use that recipe (Beetroot, Parmesan and Cashew Dip page eight) and just use your fresh pureed beetroot as the can of baby beets. Weigh them and adjust the rest of the ingredients to match.

This is a lovely dip and really tasty.


thanks guys but I want to cook up the beets as they are baby ones and too difficult to peel so I was going to cook them up and just puree them with the skins on. Any suggestions on that?

If you see this before you cook them, the Beetroot Salad in the everyday cookbook put through at a higher speed (I think I did speed 9 20 seconds) with the raw beetroot makes a really nice dip.

 

Not a day goes by I don't use my thermomix!
