Many consultants vary theirs slightly from the mushroom risotto and from each other, but here are my recommendations:

Only use 350g rice.  Use arborio, carnaroli, or another risotto rice.

Use speed 1.5 instead of soft, and DON'T use the butterfly.

Once you've started the main 16 minutes, take off the measuring cup and put the rice basket (right way up) on top.  This prevents it spitting and bubbling over your TM.

Once it's done the 16 minutes, pour immediately into Thermoserver, stir in any additions including parmesan cheese, salt & pepper and sit 5 minutes. It will come out of the TM runny, but absorb that liquid in the Thermoserver.

Try 250g pumpkin instead of mushrooms, and at the end stir a selection of sundried tomatoes, pine nuts and/or spinach.  You can also add feta cubes.

If you want to add a little something extra, stir through in the Thermoserver a knob of butter or a little cream.  Add chopped parsley as well (if you chop this in the TM before the parmesan, it is a lovely fine chop).

You may want to add half the parmesan to the Thermoserver and put the rest on the table so people can adjust the level of parmesan to taste.

If you want to add chicken, try chicken breast strips or cubes, and add them in raw with the mushrooms/pumpkin.  This saves pre-cooking and it's perfect timing.

Leftovers microwave okay with a little extra water, or you can roll them into balls and fry them to make arancini.

There's at least 5 risotto variations on this website, so if you want more inspiration, give those a try!  The red curry chicken risotto is one of our favourites.

I think it is meant to be the one from the EDC, however some consultants will vary the recipe a bit.

Not a day goes by I don't use my thermomix!

Does anyone know if the risotto typically cooked at demos is the same as the Mushroom Risotto in the EDC?  At our demo it also had sundried tomatoes, chicken and spinach in it.  T
