My daughter makes a mean Pavlova roll in the Thermomix. i havent had much luck with a normal Pav but have heard a tip for beating your egg whites on speed 3 not speed 4. dont forget to have very clean and dry bowl and have egg whites at room temp, Here is the Pavlova Roll recipe.
Ingredients
4 egg whites
1/2 cup caster sugar
2 tbsp extra caster sugar
2 cups thickened cream, whipped
250 g strawberries halved (or other fruit)
1 medium kiwi fruit (85gms) sliced
2 Tbsp passionfruit pulp
METHOD
Preheat oven to moderately hot. Grease 26cm x 32cm Swiss roll pan, line base with baking paper, extending paper 5cm over edges of long sides of pan.Beat egg whites in Thermomix on speed 3 with butterfly inserted until soft peaks form(2-5 mins); add sugar slowly through hole in lid., while mixing on speed 3 and dissolved between additions. Spread mixture into prepared pan.Bake in moderately hot oven for about 10 minutes or until lightly browned. Turn meringue onto sheet of baking paper sprinkled with extra sugar. Gently peel away and discard lining paper; stand meringue 2 minutes.Spread a third of the whipped cream over slightly warm meringue. Place strawberries and kiwi fruit lengthways along centre of meringue; roll meringue firmly from long side, using paper as a guide. Cover; refrigerate 30 minutes. Trim ends, cover top of meringue roll with remaining cream; decorate with passionfruit pulp. Cover and refrigerate until ready to serve.TIP to whip cream place cream in TM bowl and mix on speed 10 until you hear the sound change (about 20 secs) perfect everytime.Cheers
Hi - would love to have the traditional pavlova recipe if any one has - thought i'd do one for xmas.
