Forum Risotto Style Apricot Chicken

My thermo got ordered today i will defintley be trying this dish ! 

I made this with the juice from tinned pineapple I had used for pizza and cake, as I didn't have the apricot nectar. It worked well - fruity but not too sweet. I would normally end up throwing the juice away so it was great not to waste it. 

I also use the apricot tins in natural juice, and I think it tastes heaps nicer. Better for you too!

I make this often and always freeze some. I usually do half quantity  as there is only me and my bichon and  she  does not get any!

I got my Thermomix on Wednesday and will be making this dish this weekend for a weekday meal. I hope it lives up to all your replies  :)

Hi Everyone, having just recieved my thermo today this has been the first real meal i have tried in the machine.

To my delight its a quick hearty meal and quite a crowd pleaser i made two lots as we have a large family and did cook the second lots for 20 mins rather than 17 and was cooked through..

I made this dish last night it tasted fantastic! I should have cooked it for a couple of more minutes as the rice was'nt cooked right through,but i will make this again it smelt beautiful when it was cooking it looked great and my other half who wont eat apricot chicken did eat it and loved it
