 I have made this lemon curd 2 or 3 times and have had no trouble.It will thicken as it cools ,also I use the butter straight out of the fridge cut into small pieces.Hope this helps, I'm a new owner of a TM and loving it:)


I use this recipe, it's the normal lemon curd recipe I've always used just adapted it to the TM.

2 eggs2 egg yolks3/4 cup (165g) caster sugar1/3 cup (80g) chilled unsalted butterZest and juice of 2 lemons

Whisk whole eggs, yolks and sugar in TM on speed 5 until smooth.  Put temp up to 50 and add the butter, juice and zest and stir on speed 3 until thickened. Strain through a sieve into a sterilised jar. Lemon curd keeps, covered, in the fridge for 2 weeks.


hi i have  tried the lemon butter from the everyday cookbook twice now. I have only had my thermo for 2 weeks so still learning. Both times it hasnt worked right  to runny. I also tried another recipe using tm methid but still no luck. not sure if someone can help or not, thanks
