I also grate a full block of parmesan at a time & keep in the fridge in a sealed container, it lasts very well & is handy to have for our pasta & risotto dishes Cooking  1

 


Thanks Pete2103, p'raps I'll try that.  I've actually been just and grating little bits as I need it as if I'm going to clean and completely dry the whole TM just to grate 20g cheese!  Plus, it's always busy anyway... Cooking  1


I keep containers of cheddar, parmesan and mozzarella cheeses in the fridge, kept in airtight containers (I find Tupperware is the best) and they last for a good 3-4 weeks. If it's stuck together a bit i just run a fork through it. I find it so much easier to grate a whole block and keep like this than grating for each recipe. Plus I then have it on hand for pizzas, sandwiches, parmesan to sprinkle on anything Smile


Much discussions with friends and consultant - have decided to cut blocks and freezed them, then will grate the cheese as I need it.  Sometimes a bit of a pain if you can't be bothered cleaning cheese from the TM, but will save quite a bit of freezer space!

Karlie, try spreading your grated cheese on baking trays lined with paper till frozen (a thin layer).  Then break up and put into an airtight container to keep in the freezer.


I believe (and I'd be happy to be proven wrong) that pre grated cheese you buy in the supermarket has a stabiliser or similar in it to stop it from sticking together. 

You need to grate as needed to stop it sticking together,

I know the consultant told me it was much better to grate your own cheese and I do like to have frozen grated cheese on hand.


I like to keep a container of grated tasty cheese in the freezer.  Have tried grating a block of tasty in my thermomix and freezing it, but it all stuck together.  Is there a better way to do this or do I need to borrow my mum's food processor to get better grated cheese?
