For fluffy white rolls try this recipe that I have come up with. My girls keep telling me to put it on the forum but I just haven't had a chance to yet -soon, soon. The call them 'Wonder buns'. :) Please try it and tell me what you think.
500g white bread flour; 100g rolled oats; 20g raw sugar; 1tsp salt; 10-20g EVOO; 1tsp bread improver; 2tsp dry yeast; 300g very warm water. Place all ingredients in bowl in this order. Kneed for 7min. Either leave in bowl to rise until the dough pokes out of the lid hole or transfer to another bowl. Rising can take anywhere from 40min to over an hour depending on the weather -just make sure it dbles size. Kneed for another 2min. To shape into rolls I roll out the dough to the size of thermomat; using the spatula, cut in half lengthways then roll up into two long logs and using the spatula, cut into 6,12 or18pcs depending on the size roll you want. I've even made hot dog size and also twisted the two lengths to make a fancy loaf! Place on a tray and let rise till they look a good size then put in cold oven; turn temp on 200deg for 30min. Hi Im only new to Thermomix and I made a batch of rolls today out of the everyday cook book and they came out looking great, however they were bland and tasteless.. Please any feed back would be appreaciated as I would love to make this a regular part of my cooking??
