Hello, I made these gluten free yesterday and they are delicious and soft! Followed the recipe as stated, though made a 2/3 batch. I added just over half a tsp of xanthum gum. 

I used Well and Good crusty bread mix and as others have mentioned, added extra water to make a dough because otherwise it was just crumbs. Gluten free bread doesn't prove the same way as normal bread, but still did rise somewhat. 

I'm excited about soft bread rolls! 


we found a recipe in For Food's sake. Page 43. Soft Buttermilk Rolls. These turned out fantastic.

 


Try the recipe for baps on this website by Angela de Gunst. The recipe is similar to the one in the edc and always turns out perfectly. Especially nice straight out of the oven Wink . Dough is sticky but easy enough to work with when you oil your hands. A little egg wash gives a nice finish  :) 


we have made these twice to the exact recipe. they have not worked. are you saying to add an extra 50g in step 2? the taste is lovely they just do not rise. it appears to me that there is too much flour??? can anyone help.

Thank you for your feedback. The soft butter rolls are a sweeter, denser bread roll similar to brioche buns making them perfect to use for your favourite homemade burger or to have for breakfast or brunch with your favourite spreads.

 

The magnet at the front of the book is designed as a guide for you when you are creating or converting your own recipes - just as a guide to prevent you from overloading your Thermomix.

 

We have tested the Soft butter rolls recipe recipe and the machine is fine with the extra 80g of flour.  Please be reminded that you should never to leave your machine alone whilst it is kneading dough.

I made these as my first attempt at bread making and thought it was a mistake I made - I ended up putting them in my Bosch Mum Mixer and using the dough hook for 10 mins they were delicious


I made the soft butter rolls yesterday and also found the mixture far too dry.  It came out of the mixing bowl in crumbs when I expected it to be a dough and even after proving for an hour in a warming drawer it hadn't expanded much.  There seemed to be too much flour.  I tried them again this morning and the same thing happened.  Then I noticed it says on the summary table fridge sticker that 600g flour is the max but the recipe has 680g.  Very disappointed with the results.

We appreciate your feedback. Please add 50g of water in step 2 with the buttermilk and yeast and proceed as per the recipe.

Has anybody made these from the everyday cookbook? Hubby and I made these after baking buttermilk loaf and the herb pull apart, but found this dough much too dry. There is no instruction to add water in this recipe but we have. We are only up to proofing  the dough at the moment so will post an update and let everyone know how they turned out.
