  • 225 grams raw sugar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Attach butterfly whisk.
    Put all ingredients into the TM5 bowl.
    Cook 20 minutes, 80 degrees, speed 3. Curd should be the consistency to coat the back of a spoon. If consistency isn't to your liking, cook in increments of 3 minutes at 80 degrees until desired consistency is reached.

    Ladle hot curd into hot sterilised jars, and seal in a water bath.

    Makes about 1L.

Tip

Sealed in sterilised jars, the curd will last about 4 months - but it is not likely to last that long because it tastes so goood!!

Seive the curd beofre placing in jars if you dislike bits of zest in your curd.
