Ingredients
Honey Joy Caramel Slice
- 125 grams unsalted butter, for base
- 125 grams honey
- 120 grams corn flakes
- 85 grams dessicated coconut
- 70 grams caster sugar
- 395 grams condensed milk
- 60 grams Butter, for caramel
- 2 level tablespoons golden syrup
- 200 grams milk chocolate
- 50 grams dark chocolate

- Preheat oven to 180°C (160°C fan).
- Grease and line a 16 x 26 cm slice pan with baking paper, leaving overhang for easy removal.
- Add butter (125 g) and honey (125 ml) to mixing bowl
- Melt 2 min | 70°C | speed 2
- Simmer 4 min | Varoma | speed 2 without measuring cup, to allow slight caramelisation
- In a large bowl, combine 120g cornflakes, 85g coconut, and 70g caster sugar.
- Pour honey-butter mixture over dry ingredients and stir by hand until combined.
- Press mixture into prepared pan, using the back of a spoon to flatten firmly.
- Bake 10 min or until just golden. Cool completely.
- Add 395 g condensed milk, 60g butter, and 2tbsp golden syrup to mixing bowl.
- Cook 10 min | 100°C | speed 3, scraping down halfway.
- Pour caramel over cooled base, spreading evenly.
- Bake 12 min, until caramel is set and golden. Cool, then refrigerate 3 hrs until firm.
- Add 200g milk chocolate and 50g dark chocolate to mixing bowl.
- Chop 10 sec | speed 7, then melt 3 min | 50°C | speed 2.
- Pour melted chocolate over caramel and smooth.
You may like to sprinkle extra cornflakes on top
Refrigerate 15–20 min to set. - Slice into 18 pieces and serve at room temperature
