Pavlova

  • 4 egg whites
  • 200 g caster sugar
  • 1 Tbsp cornflour
  • 1 tsp white vinegar
  • 1/2 tsp vanilla

Topping

  • 300 ml cream
  • 1 tsp icing sugar
  • strawberries, blueberries, raspberries

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1.  

    1.     Pre-heat oven to 150 degree C

     

    2.     Place baking paper on a baking tray

     

    3.     Ensure the mixing bowl is clean and dry.

     

    4.     Insert butterfly and leave MC off.

     

    5.    Place egg whites in bowl and whisk for 3 minutes  / 37 Degrees/ Speed 3  until soft peaks form. Depending on the temperature of the eggs this may take a little longer

     

    6.    Set times for 3 minutes at 40 degrees speed 3, then add the caster sugar 1Tbs at a time over the three minute period.

     

    7.    Set timer for 2 minutes at 50 degrees speed 3, add the cornflour, vanilla and white vinegar whisk for  2 minutes.

     

    8.     Pile the meringue on the prepared tray

     

    9.     Bake in the oven for about 1 hour or until cooked.

     

    10.  Once cooked, turn the heat off and allow the pavlova to cool in the oven.

     

    Assembly

    Just before serving whip the cream with icing sugar.

    Add the cream to the pavlova and top with mixed berries

    I have made twice and both times extremely high volume egg white but as soon as vinegar etc hits it liquifies. What is going on.

    Followed instructions to a tea and looked good out of thermo. But was really flat.

    Epic fail x 2 😩 the first time I made it to the recipe and egg whites whipped perfectly but when I added the cornflour etc it just went to liquid (I checked the lid as per other comments, but no condensation). I tipped it out and washed and vinegar washed the bowl again.. the second time the egg whites whipped perfectly again but I kept it at 37deg and added the cornflour etc and started going to liquid again so I stopped it 45sec early thinking that it might be ok as it was not complete liquid. I put it in the oven anyway thinking what do I have to lose, but it looks like a pancake 😭 I should have trusted my instincts and used the Kenwood!

    Elyse.G: I had the same problem even though I've made heaps of pavs. I think you need to beat the egg whites a lot longer and add the sugar much more slowly over a longer period. I've been using the pavlova recipe by Val74 instead.

    SIX STARS!! Fantastic recipe, and definitely not disappointed with this awesome pavlova.
    Gave my thermi a vinegar clean first, and followed the recipe to a T - just perfect!!

    (my only disappointment was that I didn't manage to get a pic of the finished product before it was very quickly gobbled up 🤣)
    Served last night for a dinner of eight, would have certainly served ten very easily.

    I've cooked a gazillion pavs over the years by using a kenwood, this was much easier, and to be honest produced better results than my others.

    I had a go at this tonight, I just wouldn't thicken. I almost gave up when I realised the lid had condensation on it and the top of the bowl had some too, I dried it all up and turned it back on and it came together perfectly. Almost done cooking and looks perfect, all ready for Australia Day! I also made a double batch, so it's huge

    A very good pav recipe. I whipped til stiff peaks formed as I would normally & cooked til the top was cracking (about 50mins). I topped with lemon lime curd & raspberries for a change & served with vanilla ice cream. Thank you.

    I'm not sure what I did wrong? I made this pavlova twice and both times they were big sloppy failures. I followed the exact recipe and both were awful. I have made pavlova many times with a conventional hand mixer and worked perfectly. It was almost like the mixture split at the bottom and was over beaten. Any idea what went wrong? I used room temperature eggs and a super clean and dry bowl.

    Hoping for some help.... i have made this recipe twice and both times it does not produce that crunch meringue on the outside... i follow the steps to the T and have a TM5. It rises beautifully and tastes lovely but it just doesn't crisp

    Made this tonight. The mixture before putting in the oven was of a very good consistency. Put it in the oven and it almost trippled in size. Unfortunately the temperature was too hot and cooking time was too long. It ended up burning on the bottom and was far too brown when it was completed. Tasted the mixture though. Had it cooked at a lower heat for less time it would have turned out perfect I'm thinking. Had to throw the whole thing out. Bit of a waste of ingredients.  tmrc_emoticons.(

    I have made this at least 5 or 6 times and has turned out perfectly each time. I always keep a very close eye to make sure it isn't browning. I start the oven on 150 but turn it down to 140 when I put the pav in the oven. If it starts to brown I turn down to 130.

    I love this recipe. I have been requested to make it 3 times since Christmas! I make it with 6 egg whites, 300gms of sugar and whipped it for 5min, 5min and then 4min just to accommodate for the extra egg whites. It works perfectly every time!

    I made this for Christmas Day!  I followed some cleaning instructions i read on a facebook page- with Vinegar at varoma temperature for 15 minutes and I really think this is what made it amazing.

    My pavlova came out of the oven without one single crack.  It was perfect!  Nice and crunchy on the outside and soft on the inside.  It was a pretty small pavlova but it was enough given we had other desserts on offer as well.  Thanks for such a great recipe!

    Made this in bulk for a birthday it didn't stiffen like it should have possibly because of the temp even after a second go but turned out perfect in the end.  Made two thinner slabs, it was nice and crunchy, added nutella ganche and topped with whipped cream and maltesers.
