Date Compote
- 150 g pitted dates, dried
- 250 g Coffee, or water
- 3 grams Bathing soda
Dry Ingredients
- 200 g Flour, Plain
- 5 g baking powder
- 6 g salt
Wet Ingredients
- 60 g unsalted butter
- 200 g brown sugar
- 2 eggs
- 5 g vanilla extract
Chopped Walnuts
- 60 g walnuts
Frosting
- 125 g cream, 35%
- 110 g unsalted butter
- 330 g brown sugar
- 120 g unsweetened shredded coconut

- Place the oven rack in the center of the oven.
Preheat the oven to 180°C (350°F).
Line the bottom of a 25 cm (10 in) springform pan or a 23 cm (9 in) square Pyrex dish with parchment paper.
Butter and flour the sides.

If the walnuts are not chopped already
Add 60 grams walnuts and spin on 0.5 sec/Turbo. - Transfer to another bowl. No need to clean TM
- 200 g Flour, Plain
5 g baking powder
6 g salt
Add all this and mix 5 sec/speed 5. - Transfer to another bowl. No need to clean TM
- Add
150 g pitted dates, dried
250 g Coffee, or water
3g baking soda
Cook 10min/98°C/speed 1.5. - Cool down a good 10 minutes
- 60 g unsalted butter
200 g brown sugar
Mix 30 sec/speed 4 until creamy. - Add 2 eggs and 5 g vanilla extract, then mix 20 sec/speed 4 until the mixture becomes creamy and homogeneous.
- Add the dry ingredients and date compote ⯅, then mix 5-10 sec/speed 2, just until roughly combined. Be careful not to overmix. (better some dry spots left than everything homogenous!)
- Pour the batter into a 25 cm (10 in) springform pan or a 23 cm (9 in) square pan, previously buttered and floured.
Baking:
Preheat the oven to 180°C (350°F).
Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. - Add 125 g 35% cream, 110 g unsalted butter, 330 g brown sugar, and 120 g unsweetened shredded coconut to the Thermomix bowl.
Cook for 5 minutes/90°C/speed 2, until the mixture thickens slightly. - Spread the frosting over the still-warm cake and continue baking for 2 to 3 minutes, or until the frosting is lightly golden.
(Alternatively, let the cake cool and then cover with the frosting.)

Serves about 12. Small portions as it's quite heavy. Will taste better the next day.
