Strawberry banana ganache - Tracy King

  • 200 g Frozen Strawberries
  • 200 g bananas, cut into pieces (3 cm) and frozen
  • 500 g dark chocolate (see Tips)
  • 100 g double cream

Recipe's preparation

  1. Place strawberries and bananas into mixing bowl and crush 10 sec/speed 10, then melt 4 min/37°C/speed 2.
  2. Blend 2 min/speed 10. Strain fruit through a fine-mesh sieve into a jug, pressing with the back of a spoon to get as much purée as possible. Set fruit purée aside. Clean and throughly dry mixing bowl.
  3. Place chocolate into mixing bowl and melt 5 min/50°C/speed 2.
  4. Scrape down sides of mixing bowl with spatula, then mix 2 min/speed 3, until chocolate is completely melted and smooth.
  5. Add cream and reserved fruit purée and mix 20 sec/speed 4. Transfer mixture into a glass bowl and set aside for 1 hour at room temperature.
  6. To make truffles, cover ganache with plastic wrap and place into refrigerator overnight. Line a baking tray (30 x 40 cm) with baking paper and set aside. Working quickly, roll heaped teaspoons of ganache into balls (approx. 10 g each) and place onto prepared tray (see Tips). Cover and chill until ready to serve (see Tips).

Tip

We used a 51% dark chocolate for this recipe.
Food handling gloves are recommended for rolling truffles.
You can serve truffles plain or roll them in cocoa powder, matcha powder, chopped nuts or desiccated coconut.
In step 7 - ganache can be transferred into a piping bag and used to fill chocolate shells.
Truffles can be stored in a sealable container in the refrigerator for up to 2 weeks.
