For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Thermo Cazza's Rocky Road
  1. - Prepare all the filling ingredients.
With kitchen scissors - cut up the Allens Red Frogs into small pieces.
    - Quarter the marshmallows
    - Roughly chop the Macadamia nuts by hand.
    - Cut the Turkish Delight into 1 cm pieces.

Place all these dry ingredients (except the chocolate) into a bowl and combine gently by hand.
  2. Prepare your greased and lined tin.
Grease your tin with light olive oil spray and insert Glad Bake baking paper. Doing this will assist you when needing to remove the rocky road from the tin. I use a skinny ceramic tray with deep walls so that I can later cut them into round sliced pieces.
  3. Melt the Chocolate:
    - Ensure your Thermomix bowl is free from any liquid/water.
    - Weigh in your 360g of chocolate into your bowl. Break them up into their sections.
    - Grind the Chocolate: With Measuring Cup in place, set TM to 6 seconds / Speed 8
    - Scrape the sides of the bowl with a silicone spatula.
    - Grind the Chocolate: With Measuring Cup in place, set TM to 6 seconds / Speed 8
    - Scrape the sides of the bowl with a silicone spatula.
    - Melt the chocolate (Measuring Cup off) – 3 mins / 60 degrees / Speed 1 - add extra time if needed
    - Carefully place reserved rocky road filling mixture into the melted chocolate in the TM bowl.
    - Mix briefly – 20 seconds / Reverse Speed 1 (MC on)
    - Pour and press into lined long skinny tins to form its shape
    - Allow at least 1 hour for the chocolate to completely cool down and set.
    - Once set - Cut up into desired sizes and enjoy!

Lasts in the pantry for a good week or two!

Filling variations - different nuts or no nuts at all for those with allergies. Use a biscuit instead.

Make a hot chocolate drink after making this with the leftover chocolate in the bowl – heat up with some milk added – blitz and strain - then enjoy your hot drink!

Gift-giving – can be beautifully presented in clear cellophane bags as gifts.
