Syrup Concentrate

  • 15-20 g Black tea (loose), Ceylon, Pekoe, Assam etc work well
  • 5 cinnamon quills, Or 1tspn of ground cinnamon
  • 30 Colves (whole)
  • 1 star anise (whole)
  • 2 Cardamom pods (whole)
  • 20 Black peppercorns (whole)
  • 15 g Fresh ginger (peeled), Chop into approximately 10 small pieces
  • 1 cup raw sugar
  • 2 cups boiling water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Syrup/Concentrate
  1. Add all ingredients to TM bowl.

    Cook for 6 mins/100 degrees/speed 2.

     

    Allow syrup to cool slightly in TM bowl. Insert simmering basket and strain syrup into an airtight bottle or container. Store syrup in the fridge and use as desired.

     

  2. To make a chai latte simply warm or froth milk of choice and add syrup until desired strength is reached. Dust with cinnamon sugar (optional).

     

    To make an iced chai tea simply add crushed ice, milk of choice and syrup to a glass. Stir, sip, enjoy.

Tip

*All ingredients and quantities are optional. Please adjust to your liking.

 

*You may like to add: vanilla essence/extract/bean paste, orange zest, nutmeg or a pinch of chilli.

 

*Remember that this is a syrup so you will not need to add sugar when you prepare your drink.

 

*Peel ginger with a teaspoon to minimise waste.
