- 15-20 g Black tea (loose), Ceylon, Pekoe, Assam etc work well
- 5 cinnamon quills, Or 1tspn of ground cinnamon
- 30 Colves (whole)
- 1 star anise (whole)
- 2 Cardamom pods (whole)
- 20 Black peppercorns (whole)
- 15 g Fresh ginger (peeled), Chop into approximately 10 small pieces
- 1 cup raw sugar
- 2 cups boiling water

TM 5Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Add all ingredients to TM bowl.
Cook for 6 mins/100 degrees/speed 2.
Allow syrup to cool slightly in TM bowl. Insert simmering basket and strain syrup into an airtight bottle or container. Store syrup in the fridge and use as desired.
To make a chai latte simply warm or froth milk of choice and add syrup until desired strength is reached. Dust with cinnamon sugar (optional).
To make an iced chai tea simply add crushed ice, milk of choice and syrup to a glass. Stir, sip, enjoy.

*All ingredients and quantities are optional. Please adjust to your liking.
*You may like to add: vanilla essence/extract/bean paste, orange zest, nutmeg or a pinch of chilli.
*Remember that this is a syrup so you will not need to add sugar when you prepare your drink.
*Peel ginger with a teaspoon to minimise waste.
