Ingredients

- 80-100 g brown sugar, or to taste
- 1/2 cup mint leaves
- 3 limes, skin, pith and seeds removed
- 1/2 cup fresh lime juice
- 300 ml white rum (Havana Club or Bacardi)
- 500 g ice cubes
- 750 ml soda water
- mint leaves and lime wedges to garnish
Recipe's preparation
Place sugar and mint leaves in dry TM and pulverise: 10 Sec | SP10. Scrape down sides.
Add remaining ingredients, except soda, into TM bowl and process: 1 min | SP10 until combined.
With motor running at SP7, slowly pour in soda, reducing speed as the jug fills (so it doesn't spill out).
Divide mixture amongst glasses and garnish with mint leaves and lime wedges. Serve immediately.

Tip
If the party's going to be big, mill up a few batches of icing sugar so that you don't need to continually wash and dry mixing bowl between batches of cocktails.

Made these yesterday for the start to our NYE celebrations - went down very well with all involved..! I ground up the lime peel with the mint and sugar to add even more flavour (and colour) to them as well and added sparkling water, just because I didn't have soda water. Will definitely make again! Made a half batch which was
Made a half batch which was enough for four glasses. I am not a fan of mint in mojitos (I know, right!) but this was delicious. Milling the mint with the sugar makes the world of difference.
Next time I might try adding a little more lime. I added the soda water at about speed 3.
I peeled the skin off the limes before juicing and am going to let it dry out to make lime salt and/or lime sugar later on.
Just finished the leftovers
Just finished the leftovers last night from a batch i made 3 weeks ago. Freezes very well. Scrape with a fork before putting into glasses and seving for a granita style cocktail.

If you quarter limes and put
If you quarter limes and put on reverse speed 4 for 20 secs, you dont need
To peel limes etc - this bruises the limes and you just pull out skin and are left with the juice
