      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Make tea
  1. fill 2 liter of filtered water into your TM bowl (you can go to the max of 2.2l when using a TM5)
  2. add 50 g of raw sugar
  3. bring sugar water to boil, depending on start temperature 12-15 min, 100C, speed 1. Use TM5 MC or simmering basket.
  4. once water boils, add 3 tea bags (black or green tea, both work fine) through the mixing bowl lid and leave it in there for another 3 minutes (brew it for longer if you like a stronger tea). Remove the tea bags.
  5. Set bowl aside and let it cool completely to room temperature (can take a few hours)
  6. prepare Kombucha
  7. put your scoby and 100 ml of the starter tea into a bottle. Pour the cooled tea gently on top. 100 ml starter tea for 1 litre tea.

    If you have larger bottles you can make 200 ml starter tea and 2 litres, and so on.

Tip

Your scoby may sink to the bottom of your bottle/jar, float or sit sideways. This won't matter as it doesn't have an impact on the fermentation process.

Let the new tea mixture sit undisturbed and out of direct sun sitting for a few days. The longer it'll ferment, the stronger, less sweet and more vinegary the taste will be.

Try after 3 days carefully with a straw. Then try again after 5 days to see the difference. The colder your environment the longer the fermentation takes.

I like mine 7 -10 days "strong".

Pour then the kombucha into a bottle for storing/drinking. Never use metal tools (funnel, sieve, spoons,...) only plastic. Set scoby and 100 ml of the tea (or more) asside to start the next batch.

You can drink it as it is now, or flavour it with fruit and to create some fizziness for a second round of fermentation. (See pic, I've used rhaspberries)

A new scoby will grow as a layer on top of your original scoby every time. You can carefully separate the new scoby (baby = clear film in the beginning) from the old scoby (mother) and use it for a new brew. Always make sure you work with clean hands to avoid contermination with other bacteria.
