Lemon Cordial

Lemon Cordial

  • 60 grams lemon zest, aprox 4-5 lemons
  • 350 grams white sugar
  • 300 grams lemon juice, see prep steps

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Remove zest from lemons and place peel into the bowl.

    Remove as much pith as possible and place the lemons into the bowl.

    Chop 10 seconds; speed 8.

    Drain mixture through a sieve and clear the bowl of as much remainder as possible. Wipe all pieces or rinse if you want super smooth cordial.

    Pour the drained juice back into the bowl and make up the difference to 300ml if necessary.

    Add sugar

    Cook for 10 mins, Varoma, Counter-clockwise operation, Speed 3, mesuring cup off

    Let sit for 15 minutes before straining into clean bottle.

    Dilute with water or soda.
