For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Remove zest from lemons and place peel into the bowl.
Remove as much pith as possible and place the lemons into the bowl.
Chop 10 seconds; speed 8.
Drain mixture through a sieve and clear the bowl of as much remainder as possible. Wipe all pieces or rinse if you want super smooth cordial.
Pour the drained juice back into the bowl and make up the difference to 300ml if necessary.
Add sugar
Cook for 10 mins, Varoma, "Counter-clockwise operation" , Speed 3, mesuring cup off
Let sit for 15 minutes before straining into clean bottle.
Dilute with water or soda.
