Negroni Sour

  • 30 grams raw sugar
  • 2 piece Lemon peel, (4 cm strips) no white pith
  • 200 grams ice cubes
  • 60 grams lemon juice
  • 60 grams gin
  • 60 grams Campari
  • 60 grams vermouth, red
  • 2 egg whites

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. 1. Place sugar and lemon peel into mixing bowl, then mill 10 sec/speed 10.
    2. Add ice cubes, lemon juice, gin, Campari ®, & sweet red vermouth to the mixing bowl, then mix 10 sec/speed 4.
    3. Using simmering basket held in place, strain into a jug. Discard ice cubes.
    4. Insert butterfly whisk. Pour negroni mixture back into thermomix bowl & add 2 egg whites. Whisk 30 secs/speed 3.5 or until frothy. Remove butterfly whisk.
    5. Divide Negroni sour between 2 cocktail glasses. Garnish with dehydrated orange or as desired, then serve immediately

Tip

Ferment Instead of egg whites you can use 60g aquafaba (chickpea liquid). Drain chickpeas and reserve to use in another recipe.
