  • 1 Red Capscium, De seeded & cut into large pieces
  • 1 brown onion, Quartered
  • 2 cloves Garlic.
  • 1 tbsp Olive Oil.

Beans

  • 100 grams Chorizo Slices
  • 750 grams 4 Bean Mix ( canned), Rinsed & drained
  • 400 grams Chopped Tomatoes ( canned )
  • 1-2 tablespoon water
  • 1 tbsp Balsamic Vinegar.

Recipe's preparation

    Roast Vegetables
  1. Place red capsicum, onion & garlic into a roasting tray with olive oil & roast 25-30 mins until soft & fragrant. 

  2. Place roasted vegetables & Chorizo into TM bowl & turbo 6-8 times Closed lid until mixture is roughly chopped. 

  3. Add a splash of olive oil to the TM Bowl. Sauté vegetable/chorizo mix on Varoma, 3 mins, speed 1. Add 4 Bean Mix, chopped tomatoes & water to the mixture & cook on Varoma, 20 mins, Counter-clockwise operationGentle stir settinguntil mixture is rich & thick. Add balsamic vinegar 1 minute before the cooking time finishes.

Tip

I use 4 Bean Mix as I find the beans are a little more sturdy than cannellini beans. Season with salt & pepper & serve with toasted ciabatta drizzled with a little good quality olive oil.
