Recipe's preparation
1. Wet your hands
2. Take 1 tbsp risotto mix. Place cheese in middle and put some more risotto on top to form a ball. Make them bigger if you like!
3. Roll in plain flour
4. Roll in egg wash
5. Roll in breadcrumbs
6. Place in fridge for 1/2 hour to firm up (optional)
7. Shallow fry in canola oil until golden brown.
8. Drain on absorbant paper.
Great warm or cold.

Tip
This is one of the best ways you can use any left over Thermomix risotto. It doesnt matter what flavour risotto you have, just add your favourite cheese...or whats in the fridge..into the middle and you are set!
1. You can add to your risotto eg left over BBQ chicken.
2. You can add parmesan cheese or herbs to your crumbs for extra flavour.
3. As far as quantity goes...it really depends how much you have left over and how big you make the balls. 1 quantity of EDC risotto will make about 40 tbsp size balls.
The arancini balls in the picture were made with EDC mushroom risotto with haloumi cheese in the middle and a panko crumb. They were YUMMM.

Very easy to make and a good
Very easy to make and a good idea so as to not waste leftover risotto. I used leftover mushroom risotto from the basic cook book and also put parmesan in the breadcrumbs. Definitely will put that in again, gave the coating an extra boost of flavour. Thanks for your recipe!

A great way to use up left
A great way to use up left over risotto! Don't make the balls too big, otherwise the cheese won't melt by the time the outside is brown!

Prather than put cheese in middle of balls, I added extra to the rissoto mix after it had cooked, so it melted theough the rice mixture...
So easy once you get the hang of it.. And everyone loves them.
