this turned out really well cooking for only 3 minutes.

something worth noting is trying to have the florets all the same size, i had some blitzing issues (but am also new to the thermomix world!)

My husband is perfectly happy with this as a rice substitute - we love that it digests so much more easily than rice. I usually cook just as much as I need, or if there are leftovers it's good cold made into a "rice" salad.

    Submitted by tilly48 on 6. May 2017 - 07:18.

Having tried several cauliflower rice recipes never found one that was as good as this one. If you leave stalks on the florets I would suggest chopping for a least double the given time. Just leaving in the bowl and washing it and emptying the water out, is all the moisture it needs. I cooked it for again about double the given time but cosistiancy was perfect, all others I've tried tend to be mushy and very wet.

I had to repeat the chopping 5 or 6 times on reverse before it became "rice". Otherwise it turned out well. I added garlic and shallots and seasoning before the cooking time and it turned out delicious

    Submitted by Petra01 on 13. December 2016 - 23:01.

Hi, I cooked this yesterday, for dinner when the family had pasta, I had the cauli 'rice'. I only cooked it for 3 minutes to keep some crunch. It tastes a bit sweeter than I expected, but still nice. The only downfall is that the fridge is quite 'smelly' from the cauliflower. Thank you for the recipe. I will definitely make this again!

    Submitted by LizzyLoc on 10. February 2016 - 23:22.

We love chopping cauiflower to replace rice as per the instructions. My husband is a real meat and veg and potato guy but has totally been converted with the cauli rice insread of proper rice when we have curries and putting the cauli rice in the oven with a coating of curry powder and other chopped vegies for 10 - 15 mins.

Can this be frozen after cooking?  It's just hubby and me at home and I'm not sure we could eat a whole cauli in one sitting, but it would be great to have it in the freezer for another time.

    Submitted by Maida on 31. August 2015 - 20:50.

Loved this. It went well with my curry. I added oil, a clove of garlic, a sping onion and cooked this for a couple of minutes before I added the raw cauliflower rice. At the end I threw in some basil.

I often add this to leftover coconut rice that I've also cooked in the Thermomix and it's delicious.
