- 5 tablespoon grapefruit juice, seeds removed
- 1 tablespoon olive oil
- 2 tablespoon apple cider vinegar
- 1 tablespoon Agave

- 1 package salad greens, I used greens from my garden approx 2 cups.
- 1/2 pine nuts, 1/2 Cup - lightly toasted
- 1 grapefruit segmented, I used one from the garden. Could use a pink or ruby for extra colour

Tip
This is a wonderful light and refreshing salad. Would be lovely with some prawns mixed through.
I served with a pulled lamb shoulder. Even got the nod from hubby who doesn't like pine nuts!
I used a mixture of baby silverbeet (green & rainbow), red sorrel, rocket, parsley, oregano & English Spinach.
