Ph@tt compatible Broccoli Salad

  • 250 g broccoli florets
  • 20 g lemon juice, (about half a juicy lemon)
  • 2 level tablespoons apple cider vinegar, (or according to taste)
  • 1 --- green apple, cored and quartered
  • 1 pinch Himalayan salt, to taste
  • 1 pinch ground black pepper, to taste
  • 3 stalks green onion, or 1/4 red onion as in origial BCB recipe.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    This is a simple chop and serve salad, and a modification of the recipe in the BCB - you can adjust everything to suit your own taste.
  1. 1. Add all ingredients to bowl. Broccoli is your main ingredient here - don't be afraid to include lots of the stalk to this dish. When chopped it gives a lovely, nutty texture and flavour to the salad.

    2. Insert measuring cup, then chop for 10 seconds on speed 4.

    3. Scrape down the sides of your bowl and stir briefly with your spatula to check on the texture of the ingredients so far - this also helps to make sure that the broccoli is chopped evenly.

    4. Repeat step 3 as necessary until you have the texture you prefer. I usually end up chopping for about 25 seconds in total.

Tip

This recipe should be compatible with Ph@tt steps 1, 2 and 3.

Be aware that the green apple should be counted as a small portion of your fruit allowance, depending on the size of your serving.

The original BCB recipe includes 100g of natural yoghurt which I've swapped for the apple cider vinegar here. You can use the yoghurt instead if you are in step 3 of the program.

This recipe lends itself to tweaking with your favourite fresh salad herbs, and you could also replace the lemon juice withe fresh lime or orange.
