Boston Corn Chowder

  • 6 slices bacon, roughly chopped
  • 1 onion, quartered
  • 2 tbsp Veg Stock Concentrate
  • 750 grams water
  • 1 teaspoon sugar
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 300 grams Potatoes (optional), chopped to bite size pieces
  • 25 grams Butter
  • 440 grams Tinned Corn Kernals, drained
  • 300 grams thickened cream

Recipe's preparation

    Boston Corn Chowder
  1.  Place quartered onion into TM bowl and chop for 5 sec speed 7

    2. Place roughly chopped bacon and butter into bowl & saute with onion 3minutes on speed 1

    3. Place all remaining ingredients except for cream into bowl and cook for 15min on 80 C speed 1 Counter-clockwise operation

    4. Add cream and stir Gentle stir setting speed for 1 min on Counter-clockwise operation

Tip

Potato can be added as an option to turn this soup into a main meal, for those with hearty appetites. Just add potatoes with the other remaining ingredients before cooking for 15 min.

    This was a great way to use up a half bag of frozen corn.  I only had 3 rashers of bacon and it still worked fine.  Instead of the cream and potato, I actually put in 400 g of left over thermie mashed potato and it worked a treat!  Great way to use up mashed potato.

    Was about to convert an old recipe but found this recipe.  I added some cornflour to thicken it up.  Lovely chowder that you could add seafood as well. Big Smile

    Really yummy, realised half way through cooking didnt have a tin of corn so used 220g of frozen corn and a tin of creamed corn. I also blended it a little bit for the 1 year old and it was a hit.
