Berry Good Jam
- 500 grams mixed berries, Can be frozen
- 150 gram castor sugar
- 1 Lemon juiced & Zest

- Place berries in TM bowl
Chop Speed 6 - 5 seconds
Add sugar, juice & zest of lemon, making sure there are no pips.
Lemon juice acidity if crucial for the helping the jam to set, without needing extra pectin.
place simmer basket on top of TM without MC - This allows steam to escape , prevents splattering and reduces moisture.
Cook 40 minutes , Verona 110C on Reverse Seed 2.
Cooking time may vary depending on type of berry fruit used.
Place a plate in freezer for 5 mins, remove and pop teaspoon of jam on plate. Skin should form on top. If not cook further until skin forms.
Carefully pour hot jam into warm sterilised jars.
Seal lids tightly and turn upside down to cool. This should help to create a proper seal.
