Nachos with beans

  • 3 clove fresh peeled garlic
  • 1 l onion, large, peeled and quartered
  • 30 g olive oil
  • 2 tbsp Cumin Powder
  • 2 tbsp coriander ground
  • 1 tsp Chlli powder, to taste
  • 1 tbsp Rapadura Sugar
  • 1 can Tomatoes (canned diced)
  • 4 tbsp tomato paste
  • 1 can red kidney beans (400g), rinsed and drained
  • 400 g Soaked T.V.P., Optional
  • large packet Corn Chips
  • salt and pepper to taste
  • Sour cream and Guacamole, serve with
  • 200 g Tasty cheese

Recipe's preparation

    Nachos with beans and T.V.P.
  1. Place the onion, garlic in the TM bowl, chop for 5 seconds on speed 6, scrap down the sides,  add the oil add the coriander and Cumin and Chilli paste/powder, and cook for 3 minutes, 100 °, speed 1.

     

    Add the tin tomatoes, tomato paste & rapudura sugar, mix for 3 seconds on speed 3, just to combine these liquids.

     

    Add the rinsed Red kidney beans,  and soaked T.V.P. give a stir with your spatula to combine, cook for 15 minutes, 90°, reverse,  3.

     

    Place some Corn Chips onto a plate as flat as you can, sprinkle with some grated tasty cheese, place under the grill and melt the cheese for 1-2 minutes,

    Remove from grill and spoon on some of the bean/tomato mixture, spread it out over the cheese Corn chips,  then sprinkle a bit more grated cheese on the top and grill again until the top cheese has melted !

     

    Serve with sour cream and or guacamole (avocado dip)

Tip

T.V.P. Is a Vegetarian Mince.  I buy it at any Health shop.  It is cheap, and an amazing subsitute for minced beef.  It is dried, so you need to soak it for 10 mins before you use it to cook.
