Summer Prawn Salad with chilli mango mayonnaise

Ingredients

4 portion(s)

  • 18-36 Prawns, cooked
  • 1 cos lettuce, bite size pieces
  • 1 mignonette lettuce, bite size pieces
  • 6 spring onions, sliced
  • 1 red capsicum, julienned

Recipe's preparation

    salad
  1. Combine salad ingredients in serving bowl or platter.  Chill.  Arrange prawns over salad either on individual bowls or platter and drizzle with chilli mango mayonnaise.  Serve immediately.

  2. CHILLI MANGO MAYONNAISE

    Peel mangoes and place in bowl, process on speed 4 for 3 seconds.  Remove and wash and dry bowl thoroughly. 

    Insert butterfly.  Place egg yolk, salt, pepper, curry powder, vinegar, chilli sauce (all at room temperature) in bowl, and process on speed 4 for 1 minute on speed 4.

    With blades rotating on speed 4 with MC in place, slowly drizzle the oil onto the lid, add at steady pace, taking 4-6 minutes to add. 

    Once finished, wipe down sides of bowl and add mango puree.  Process for 20 seconds on speed 40.

Tip

rockmelon may be added to salad, cut into 2cm cubes


The mayonnaise is delicious and refreshing on other summer salads. 


Try chicken instead of prawns.

    I made the QuirkyCooking mayo and bought some mangos a week ago but because I wasn't sure on the mangos, I still have not put any in. I will have a go now tmrc_emoticons.)

    sorry i have had problems trying to modify things on this page...ingredients for dressing

    4 egg yolks, 2tblsnps white wine vinegar, 1/4 tspn curry powder, 2 tblspns sweet chilli sauce, 200gms oil (grapeseed or light flavoured), 2 mangoes, peeled, salt and pepper to taste.
