Nigella's Parmesan Shortbreads

Ingredients

Parmesan Shortbreads

  • 150 g plain flour
  • 75 g Parmesan cheese, roughly chopped
  • 100 g unsalted butter, soft
  • 1 egg yolk, large

Recipe's preparation

    Dough
  1. Blend all ingredients in TM bowl 10 sec / speed 6.

  2. Knead 30 sec / Closed lidDough mode.

  3. Press into a tight ball and knead lightly on floured surface or Thermomat until smooth.

  4. Divide dough into 2 equal portions.

  5. Roll each portion into a cylinder, wrap in cling film and refrigerate for 45 mins.

  6. Baking
  7. Preheat oven to 180*C.

  8. Cut each cylinder into 24 slices.  Place on a lined baking tray.

  9. Bake 10 mins, until golden at the edges.  Cool and store in an airtight container.

Tip

I cut each cylinder into 24.  If you use thicker slices you will need to bake for longer.
