Zucchini Savoury Scones

Ingredients

12 slice(s)

Dough

  • 2 cloves garlic
  • 240 g Self Raising Flour
  • 1 tablespoon raw sugar
  • ½ teaspoon salt
  • 115 g Butter, at room temperature
  • 210 g vintage cheddar / gruyere
  • 150 g zucchini, cut into pieces
  • 1 tablespoon chives, (optional)
  • 180 g plain yoghurt
  • cake flour, to dust

Recipe's preparation

  1. Grate cheese 5 seconds / speed 5. Set aside.

  2. Place garlic in the bowl & chop 3 seconds / speed 7. Scrape the sides of the bowl. Add zucchini (& chives if using) & chop 5 seconds / speed 7. Set asside in separate bowl to cheese.

  3. Mix flour, salt & butter 10 seconds / speed 4.

  4. Add ½ the cheese, all the zucchini mixture & yoghurt. Mix 8-10 seconds / speed 3 until just combined. 

  5. Turn out onto a baking tray prepared with baking paper & a sprinkling of flour. Dust with more flour & shape in to a 3cm high disk. Work the dough as little as possible. It will be quite sticky. Please note the dough does spread while baking so don't make it too thin. 

  6. Sprinkle the remaining cheese on top & bake at 180 degrees for 40min.

  7. Cool slightly before cutting into 12 pieces like a cake.

Tip

Serve with Tomato Chutney / Relish & Sour Cream for a savoury take on scone with jam & cream
