  • 220 grams almonds
  • 3 free range eggs
  • 60 grams raw Organic Honey
  • 60 grams vegetable or macadamia nut oil
  • 1/2 teaspoon baking soda or bi carb soda
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon

Recipe's preparation

  1. Preheat your oven to 180 degrees

  2. Place almonds into TM bowl and mill for 6 seconds on speed 6.

     

  3. Add smashed ripe bananas, honey, oil, cinnamon, vanilla, eggs and bicarb soda and mix on speed 5 for 5 seconds

  4. Place mixture into one loaf tin - lined with baking paper and bake for 45 minutes to 1 hour.

Tip

Serve warm or at room temperature by itself or with a little ricotta or greek yoghurt and honey or blueberries.  It keeps in the fridge for 1 week, or freeze into slices ready to use.

    Thanks for the recipe. We enjoyed this low sugar gluten free recipe. Used 4 small bananas and malt rice syrup as the sweetner. I used 100g whole almonds and 100g some dried milled almond pulp (left over from making almond milk) . Worked well.

    Delicious! I already had almond meal handy, so that made it less noisy for my sensitive little helper Smile I also added raisins for a bit extra yum! I was worried because my mic looked so moist, and I’m a rookie baker, but it turned out perfect after just 35mins! Great, easy recipe!

    So easy to make and very yummy. I also used 3 bananas. My daughter thinks, next time more banana and less "seeds". Agree with previous comments, that the almonds need at least 10 if not 15 seconds milling.

    Please could someone tell me what I am doing wrong - I thought I followed the recipe acurately. Initially it rose very nicely, but then the center totally collapsed. It still tastes lovely, just doesn't look so good.

    I made this today using 3 bananas based on other people's comments below (thank you!!). I milled the almonds based on the recipe which resulted in having small pieces of almond throughout the loaf. Personally I don't mind this but if you want a more traditional finish you'll need to mill the almonds more. The finished product is delicious Smile

    I didn't have almonds, so used 150g brown rice flour and 70g white rice flour.  Cooked them in muffin tins as well and came out perfect. Next time I think I might add some stewed aple or pear too.

    This is a Great GF receipe. I do agree that the ingredients needs to state 2 to 3 bananas and mill the almonds for longer. When you work this out it works really well.

    Can I suggest adding "bananas" to the ingrediants section.

    Was about to make but found it odd i didnt require bananas. Read through the method & realised I do need them.

     

    after cooking this, I think the almonds need milling for 10 seconds to be finer In end product? They were a bit too big for my liking at when eating. ill use 3 bananas next time, as 2 were not flavoursome enough. Also cook for maybe 35-30 depending on your oven as mine burnt at 45 (admittingly I did forget.about it until the timer went off at 45mins ) but ovens do vary.
