Melt in mouth Lemon & Poppyseed Biscuits

Ingredients

Biscuits

  • 250 g Butter, softened
  • 200 g Sugar, raw or caster
  • 1 egg
  • 400 g self-raising flour
  • 2 tbsp lemon rind
  • 2 tbsp lemon juice
  • 2 tsp poppy seeds (optional)
  • 2 tbsp Milk

Recipe's preparation

    Method
  1. 1. Preheat oven to 180 conventional/160 fan forced.

     

    2. Place butter and sugar into bowl and cream for 2 min. on speed 6.

     

    3. Add egg and flour and mix for a further 10 sec. on speed 6.

     

    4. Scrape down bowl.

     

    5. Add zest, juice and poppy seeds (optional) and mix for 20 sec. on speed 6.  

     

    6. Add milk and mix for a further 20 sec. on speed 6 (you may need to use your Thermomix spatula to help move the dough).

     

    7. Roll heaped teaspoons of the mixture into balls and place on a tray lined with baking paper, approx 5cm apart.

     

    8. Cook for 12-15 minutes until lightly golden.

     

    9. Allow to cool for a few minutes before transferring to a wire rack.

Tip

*You can soften your butter first by placing cold butter into bowl and setting the temp to 50Gentle stir settingfor 1 minute, then proceed with step 1.

 

*This can be easily adapted to an egg free recipe by using an

egg substitute such as 'No-egg'

    Easy recipe, love it that there is not too much sugar. I did`nt have lemons so substituted a lime instead. My kitchen smells delicious. The amount of lime flavour is perfect, very delicate taste like a tea biscuit. Thank You!

    Great recipe, I used chia seeds instead of poppyseeds and next time would reduce the amount of lemon juice but thats just me.  Really easy and tasty.
