Panko Crumbed Tuna Patties

  • 800 g tuna, fresh, partially frozen
  • 2 cloves garlic
  • 6 sprigs basil
  • 2 lemons, zest and juice
  • 2 sprigs parsley
  • 4 tablespoons mayonnaise
  • 3 eggs, lightly beaten
  • pinches salt
  • pinches pepper, ground
  • breadcrumbs, 1 cup
  • panko breadcrumbs, 2 cups
  • 2 tablespoons olive oil
  • 2 lemons, cut into wedges to serve

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place 400gm of tuna in TM Turbo speed, 1 – 3 times (as desired) take out and put aside

    If using fresh tuna it must be partially frozen to be able to mince. Otherwise canned tuna is also fine.
  2. Repeat with the other 400gm of tuna
  3. Place garlic, dill, lemon zest, parsley, salt and pepper in TM - 3 seconds – speed 7. Push down sides with spatula
  4. Add lemon juice, mayo, tuna, plain breadcrumbs and eggs in TM – 20 seconds, speed 3 mix (reverse option)
  5. Take out 1/3 cup of the mixture, roll into a ball and slightly flatten into patty shape and place on lined tray. Repeat (makes approximately 14 patties) with remaining mixture. Cover and place in fridge to set (if time permits) for 30 mins
  6. Take patties out of fridge and place panko breadcrumbs in a shallow bowl / plate
  7. Add oil to pan on medium heat
  8. Take a patty and cover in panko breadcrumbs and add to pan
  9. Cook for 3 mins each side and continue for remainder of the patties

Tip

If you are time poor you can cook these as soon as you have made them but if time permits cover and place in fridge to set for 30 minutes. Served with a garden salad this is a really nice light meal and very healthy!
